Gado Gado

This one’s a staple for me while holidaying in Bali, it helps me even out all the cheat meals at Potato Head & Da Maria. Fresh & Crunchy Vegetables with Soft Tofu tossed in a distinct peanut marinade. Try this out for your next dinner!

Ingredients:
  • 2 Potatoes, Boiled, Peeled & Diced
  • 2 Eggs Boiled, Peeled & Quartered
  • 50g French Beans
  • 50g Asparagus
  • 50g Bell Peppers
  • 50g Beans Sprouts
  • 50g Carrots
  • 25g Onions
  • 25g Cucumber
  • 25g Tomato
  • 25g Spinach
  • 75g Silken Tofu
  • 150g Peanuts
  • 2 Cloves Garlic, Crushed
  • 15g Palm Sugar 
  • 2 Bird’s Eye Chillies
  • 7g Salt
  • 5g Tamarind Paste
  • 5ml Light Soy Sauce
  • 50ml Hot Water
  • 10ml Sesame Oil
  • Coriander sprigs for Garnish

Method:
  • Blanch the Asparagus, Beans, Carrots & Spinach.
  • Roughly dice all the Vegetables, mix & set aside.
  • Lightly Sauté the Tofu & Dice as well. Add to the Vegetables.
  • Blitz all the ingredients for the Sauce together in a Nutribullet.
  • Toss All the ingredients in a peanut sauce and serve some alongside as well.
  • Garnish with Coriander, serve chilled
